Toshio Tanahashi, born in 1960, brings a wealth of experience and expertise to this event. His journey in Shojin Ryori includes a three-year apprenticeship at Gesshinji Temple, founding the acclaimed Tokyo restaurant Gesshinkyo, and gaining international recognition through demonstrations at prestigious venues like London’s Victoria and Albert Museum. Tanahashi’s collaborations with world-class chefs such as Alain Ducasse and Daniel showcase his innovative approach to Shojin cuisine.
